Our Bicol Express Scallop dish is inspired by the meal that we cooked on our trip to the Philippines, I (chef .kings ) wanted to bring a part of that back for everyone to taste. The Scallop is seared in brown butter oil & placed on a ginger, thai chilli, turmeric and coconut milk sauce, called our “Bicol Express sauce”.
Bicol Express is traditionally cooked without turmeric but I added my own flare to it to bring some color and warmth to the flavor. It’s then topped with a brown butter cashew crumble to add texture; Szechuan chilli oil for heat, micro cilantro for freshness, & black salt. Served with a side of crispy crab fat rice so that you can scoop up the rest of the sauce in the bowl.
