Bill Zonios, a Pennsylvania-based pizzeria owner who also made the switch to unbleached/unbromated flour, says potassium bromate “lets you take shortcuts that you can’t take if you are using unbromated flour.” For example, his mixing time for dough containing potassium bromate was about three minutes faster than dough using unbromated flour.
The owner of Glenside Pizza in Glenside, Pennsylvania, spent about a month trialing different flours and tweaking his dough recipe before discovering one that closely emulates the dough recipe his pizzeria had been using since 2001 – minus the potassium bromate.
“I wish more people would make this change,” Zonios tells Pizza Today. “You have to put customers before profits. Do your research, educate yourself. … You can feel good about it.”
A dough conditioner popular with New York City pizzerias would become illegal under food-safety legislation passed by the New York state Assembly this week.

Congrats New York for making this move. While some business owners clearly aren’t happy about it, it’s the right decision. Potassium bromate is linked to cancer in humans and we should do away with this awful chemical. Time to go back to the drawing board with your dough recipe like we did.
We made the change to an unbromated flour on our own, not because of a ban. And we did it because we genuinely care about the product we sell. That’s why our desserts are free of artificial ingredients and our lunch meats are now nitrate free.
Starting from scratch with your dough recipe will bring the best out of you. But ultimately, it’s best for the people you serve and have supported you through the years.

What we call ‘Greek Style’ Pan Pizza originated in the 1950’s when Greek immigrants arrived on the east coast and headed north toward New England where it all began. Instead of the traditional hand tossed pizza dough, they began using pans instead; allowing the dough to proof and form an airy, yet crispy crust. We’ve been doing this for over 40 years. 25 at this location. And we plan on 25 more!
