At Ogawa, time is an ingredient we honor as deeply as seasonality. We welcome the .byeverlasting dry-aging cabinet, where fish and meat rest in quiet balance, evolving with intention rather than haste — and, admittedly, looking rather beautiful while doing so.

We’re excited to share that this Sunday, November 30th, Chef Carlos will bring his talents from Ogawa to Post Haste for a special collaborative tasting menu.
This one-night-only menu will carry a spirit distinct from Ogawa’s omakase — a bit more rebellious and casual, while still rooted in the same commitment to exceptional ingredients, passion, and care that define the Ogawa experience.
Chef Carlos will also be teaming up with Post Haste’s Chef Ari Miller to create several collaborative dishes. Guests can expect deeply flavorful fish, umami-rich broths and sauces, fresh reinterpretations of classic Japanese preparations through Chef Wills’ personal lens, and feature plates like tuna tartare, uni pasta, miso mussels, chicken karaage, and more.
We can’t wait to share this special evening with you.
Reservations are available on OpenTable through Post Haste’s link in bio or our story!

Ogawa is proud to take part in the very first Chomp for CHOP!
This week-long fundraiser brings together dozens of incredible Philly restaurants to support Food Pharmacy Program, which provides nutritious food to families in need.
Created by Abbe Stern, CHOP’s Food Pharmacy Manager, the goal is to raise $50,000 to help fight food insecurity in our community.
From Nov. 10–16, Ogawa will be donating a portion of our Omakase sales to support this amazing cause. Join us for an unforgettable meal — and make a difference while you dine.

At Ogawa, each season finds its voice in what we serve.
This evening, it speaks through kinmedai — golden eye snapper, its skin delicately seared, revealing beneath a tender, luminous flesh. Rich with balanced fat and natural sweetness, it embodies the quiet depth of colder waters — a fleeting gift of autumn, poised between warmth and restraint.

At Ogawa, even the most time-honored ingredients are treated with quiet precision — not only for their flavor, but for the season they speak to.
Kohada, a silver-skinned gizzard shad, is one of the most traditional bites in the Edomae style. Cured first with salt, then gently with rice vinegar, it rests for at least a day — though some will wait up to ten — allowing its rich, clean flavor to fully bloom.
In fall, kohada is especially prized. The fish grows plump and fatty as the waters cool, offering a depth that lingers, yet never overwhelms.

Chopsticks or Hands? The Sushi Etiquette Debate
Did you know that, traditionally, sushi was meant to be eaten with your hands? While chopsticks are commonly used today, there’s a reason why, at Ogawa’s Omakase experience, Chef Carlos and Chef Andy still encourage guests to use their fingers for nigiri.
This practice harks back to sushi’s origins in Japan, where vendors served bite-sized pieces at street stalls, and customers would pick them up by hand—no chopsticks required. Using your hands allows you to gently lift the sushi without squeezing or breaking the delicate rice, preserving the perfect balance between the rice and the fish. Additionally, the warmth of your fingers can subtly enhance the texture of the rice, making for a more authentic and immersive experience.
Of course, there’s no “wrong” way to enjoy omakase—what matters most is what makes the experience enjoyable for you. Do you prefer chopsticks or hands when eating sushi? Let us know!
