A few months ago, we opened our restaurant on Atlantic Avenue in Delray Beach. Creating a restaurant is a long and deeply personal process. In every space we’ve built, we’ve chosen each object and piece of art with intention — so that, as they come together, they merge with the architecture, design, history, and neighborhood, taking on a distinct personality.

Our restaurant in Delray Beach was inspired by Lustau’s Bodega in Andalucia as The Sundy Village feels reminiscent of these iconic southern Spanish “sherry cathedrals” — give “Lustau’s Sherry Bodega” a Google search to see what we mean.

This month’s Just In Case, our monthly newsletter featuring selections from Beverage Director Emily Nevin, all have something in common beyond the bubbles: they’re made by people who farm like it matters, because it does.

A few months ago, Emily Nevin, Emily Barr, and Gretchen Thomas from our creative team, along with Marta Plana of Winetones, spent some time visiting one of our featured producers, Finca Viladellops.

Here’s Emily, in her own words, plus a few photos from the trip:
“A few months ago, we were at Viladellops with Marcelo, the owner and winemaker. He was showing us around the property in his ancient Land Rover that has absolutely no business still running and stopped mid-vineyard, got out, and handed me an almond flower straight off the tree. That smell — powerful in the way that only delicate things can be, honey sweet, totally fleeting — is baked into my memory. And honestly? It’s baked into this wine too.”

Finca Viladellops, LD Ancestral (Penedès, Spain): 100% Xarel·lo Vermell, the red-skinned version of the Penedès’ most iconic white grape. Made using the ancestral method, meaning one single fermentation that finishes right in the bottle. No shortcuts, no added sugar, natural carbonation only.

It pours a pretty onion-skin color with fine, zippy bubbles. Subtle strawberry, a little citrus, and something floral and wild underneath. It’s fresh and happy — exactly how it feels to be standing in that vineyard.
