We recently welcomed Stephanie, cheesemaker and owner of , to Parc for an afternoon with our team, tasting through and learning more about the craft behind the cheeses now featured on our Assiette de Fromages.
Our selection comes entirely from Valley Milkhouse Creamery in Pennsylvania’s Oley Valley: Thistle, a Camembert-style cheese; Blue Bell, a raw milk Stilton-style blue; and Lady’s Slipper, a rich, raw milk Dutch-style tomme washed with c***r lees.
Best enjoyed with a glass of Victorine de Chastenay Crémant de Bourgogne Brut. 🧀🥂
