It was Almond Horn production day yesterday. This Termini Classic dates back to the eighties when our favorite German Baker Kluas, introduced us to one of his childhood favorites. The recipe is simple but the production is very much "hands on". First, Nick mixes the dough consisting of almond paste, egg whites, and confection sugar. Once mixed, the dough needs to be separated into individual pieces so the team can hand roll each pastry in natural almond slices and then hand form into the shape of a horn. Once the production process is finished all of the unbaked pastries are frozen and stored. Each morning the "Morning Team" bakes the Almond Horns ordered the night before from our other retail locations to a golden brown, and then hand dips each in dark chocolate prior to be delivered to our stores.

The almond horn production consisted of (7) bakers working a little over (4) hours each for a grand total of (28) production hours.

The Pan Cheese Cake... It's been a little while since we have had them available. The reason why they have been absent for such a long period is because we did not want to raise the price of them.

The big issue with this pie is that each shell has to be hand rolled. It's not like the New York Cheesecake where the pan is coated with crumbs prior to the batter being poured into the pan. If we continued making the Pan Cheese shells the way we normally would we would have had to raise the price at least 15% to cover our overhead increases. BUT WE FIGURED IT OUT!

Together with Nick and Robert we figured out how to decrease the cost per shell by doubling the production of the hand rolled shell and refrigerating the unused amount for use the in the following weeks. Instead of tacking the savings to our bottom line we used it to keep our Pan Cheese Cake at the same price.
The quest continues....

Beginning tomorrow the Cherry, Pineapple, and Plain Pan Cheese cakes were made today and will be available at all stores... Sorry for the delay everyone, and as always thank you for your patience and continued support.

Torrone is typically made during the cool Autumn and Winter weather but sometimes throughout the Spring and Summer it is necessary for us to make it so we do not run out. Yesterday was a Torrone Day, and it came PERFECT. The Torrone Team started early in the morning and finished up just around mid afternoon. Someone had a very big party for the Eagles Draft night. The featured item for that party was our incredibly creamy New York Cheese Cake Slices. Each batch consists of freshly cracked eggs, Philadelphia Brand Cream Cheese, heavy cream, Vanilla bean extract, and sugar. (You don't need to tell the doctor any of that!). The process starts with Robert and Nick mixing, pouring, and baking each batch, then later after the cheesecakes are cold, ends with our pastry team slicing and carefully placing each slice in parchment paper.

It was Cucidati and Blondina day at the bakery yesterday. We had almost the full team (12 of us) in action. Scaling, mixing, panning, piping, egg washing, baking, and keeping many, many cookies. The early morning team started production at 6:00AM and the afternoon team wrapped up at 2:00PM. When all was said and done "Team Termini" spent a combined 50 labor hours to meet our goal.
