We’ve been so blessed the past couple months to have some really awesome local friends show up to brew with us on our humble old system. We’ll talk more about the beers we made more as they’re released in to-go formats, but for now, if you see them on draft, snag’em; a huge shoutout and thanks to these awesome humans!

Today we turn Nine and the festivities are in full swing. Party is going 2pm-8pm today! We’ve put together a super special draft list filled with favorites old and new, food specials, donuts, DJ’s, and more.

And before we get into more specifics, we want to say THANK YOU to all of you for the support these past years. We couldn’t do this without you.

This year for the anniversary beer, we are pouring a draft-only single barrel blend called Nine - which tasting just lovely – and, also, in honor of Bancroft Day, we’ve got a super fun variation on our house pale ale, conditioned with Brett! We’ve got a very small amount of Brett-Conditioned Bancroft on draft and we’ve got bottles available for takeout too!

And there’s more. We just tapped this very special oak cask conditioned Best Bitter called Threads, which happens to pair perfectly with Carol’s birthday cake minis, so we are giving ‘em away with every mug of Threads until it kicks.

Chef has crispy fish tacos and tender lamb gyros for you all day long, and is here spinning some tunes with taking us into the evening hours later.

So we hope you can come out and join us in celebrating this little brewery, the incredible community that has formed around it, and our second-to-none staff who make it all happen day after day. Cheers to Nine Years!

Here’s few more highlights from the draft and package lists:

We’ve got bottles and draft of DDH Western Sharpening – a double dry-hopped version of our West Coast style IPA with Citra, Mosaic, & Simcoe.

On draft: Way Ahead, our aged-hop biere de garde collab with . We’re excited about this one. Tasting notes of Citrus Tea, Herbs de Provence, and aged Manchego coming off the dry hop.

On draft: Entropy Pt.1, a vintage specialty barrel blend which has been aging for almost as long as we’ve been here, and has done so gracefully.

In bottle: Our house farmhouse ale, Rosewood, along with Grave Flowers, a Saison de Coupage consisting of young saison brewed with spelt, triticale, sorghum, and buckwheat, blended with a 6 month barrel of munich farmhouse ale.

And so much more! See you soon!

NEW MENU BITES!

Just in time for the anniversary and starting tonight dropping some new flavors and bringing back an old favorite…

Danish Dog - curried remoulade with capers, pickles, curry powder and red onion with quick pickled dilly cucumbers and crunchy french fried onions

Fiery Chipotle Wings - spicy chipotle and cool lime charge these wings up, keep your beer close…

Crispy Chicken - snack sized crispy fried chicken thighs with jalapeno honey, ranch or honey mustard .. or all 3! THATS RIGHT! THE TENDERS ARE FRIGGIN BACK!

Also, Curt has decided we will be playing every possible curling event televised for the olympics this year and if that doesn’t make you want a Bancroft Beer, i don’t know what will.

FEBRUARY 15th IS OUR ANNIVERSARY AND WE’RE TURNING 9!!

We’re throwing an all-day shindig and have got a bunch of cool things in the works for our little brewery! We’ll be tapping several releases and draft-only offerings including a very special version of Bancroft Beer and a 9th anniversary barrel blend. We’ll have a few super cool DJ’s spinning tunes as well!

Curt and company dipped into the storage depths to taste through and pull a couple very nice vintage kegs from the cellar. Along with these, we reconditioned and filled his old oak JW Lees pin with a pre-war inspired Best Bitter that will get tapped in the afternoon!

It’s going to be a tasty day of crazy cool farmhouse ale and crushable session beer and we wouldn’t have it any other way; Good vibes all around, so come say hi and celebrate with us!

We’re in the process of building up our barrel supply in the brewery these days. From the farm, we got back 3 neutral double-oaked wine barrels to hold a more lambic-minded project, “post-lambic” maybe 😈

The oak was fully reswelled, steamed, and rested with metabisulfite/acid solution over the course of a week, before being thoroughly rinsed and filled with fresh wort and a seperate culture from the barm doing our typical farmhouse fermentation. This nectar will spend all points of fermentation life in the barrels and be blended out at 1 to 2 years old, with the hope to then do it all over without ever pitching yeast again. Ultimately we’re seeking to allow the culture resident within the oak (and to a certain extent, the brewery) to guide this project for many years to come.

We’re also looking to add another six stack of farmhouse ale barrels to up our rosewood production, as we’re looking at a bunch of fruited farmhouse ale in the works. 2026 looks to be a nice resurgence of barrels for us!

SNOWDAYZ SPECIAL!!
$5 - 10oz pours of both vintage Burn/Twist/Reform and Incantate on Sunday and Monday!!

The last little 1 year old keg of Burn/Twist/Reform, this is our imperial porter conditioned on mizunara wood. Incantate is our dark barleywine conditioned on coconut, going back on briefly for the occasion.

(teaser photo of some barrel-select Chêne coming out in the near future)

Bunch of cool things to talk about!

We just tapped this really sick 100% Chinook IPA called Old Chambers (7%); it’s all the good stuff: Pils, Extra Light Wheat, Malted Oats, and a just-so-subtly under-pitched 3rd generation of Conan, which has become our all-around ale yeast these days. Originally it was going to be Chinook and Mosaic, but this lot of 24’ Chinook was so good we had to feature it; big grapefruit candy aromatics straight out of the bag.

We’re on our last couple cases of bottles of the first batch of our standard farmhouse barrel beer, Rosewood Ale! It’ll get blended again within the next month so expect it back in bottles again in March. This comes out of our standard base saison grist, called “Maison,” and is really meant to be something that has both balanced youthfulness and the funk/brett expression to last for years. The bottles will generally always be the best expression, so grab one and forget about it on your wine rack 🙂‍↕️

Just got some sick HBC-586 from my favorite harvest year; so more very nice haze is coming down the pipeline ✌🏼

Recently reconditioned the oak of a very special old barleywine pin, so start expecting some cool in-house stuff for our anniversary in February :)

On Tap NOW is ANTI-PLATO, an IPA-inspired soft drink!

We start with a base of green tea, sweeten with pineapple juice to the range of finished beer, and acidify with a super juice made from orange, lime, and citric acid, then finish by heavily dry hopping with Cryo Citra and force carbonating. Meant to give you all the sensation of drinking your favorite hazy beer with none of the alcohol, consider this the test batch, we’ll definitely make more. Happy January and may all of your resolutions work out :)
