her cocktail, the comocabana, is built around fernet… gin, coconut, real lime, simple, fernet, and fee foam come together for a mashup of american tiki with italian flair. “fernet is often misunderstood,” she explains. “i wanted to give it a platform that showcased how the herbal and menthol flavors can add layers to drinks that nothing else can.”

her bartending hot take? non-functional garnishes are overrated. and if she had her way with fall menus, she’d love to see aperitif and sherry-based cocktails take over the city, “give me an americano or an adonis and i’m one happy girl.”

Meet the bartender continues this week with Dawn, 18 years behind the bar and she makes it look easy.

Her drink? Introducing Tentatrice - “temptation” in Italian, and she definitely built it to match. tequila, poblano, hibiscus simple, strawberry, lime juice, hibiscus tajin rim. vibrant, a little spicy, slightly dramatic… just like her!

“i love a little spice mixed with a little sweet, in whatever form that may be.”

We asked Dawn what song gets her hype behind the bar? t-pain’s “bartender” comes on and she’s fully in her element, cliché, sure, but it might as well be her theme song.

his take: “it’s summer. A little bit of heat. Some strawberry. Lemon. A whiff of basil. Ingredients we need to get rid of. It all comes together for a refreshing blitz of flavor.”

he’s been bartending 8 or 9 years, he’s lost count, bringing all of it behind the bar at mia ragazza. his philosophy: know what someone wants before they do. “i want something sweet” is your cue to ask questions and make them a drink they’ll be chasing at every other bar after. It’s the most difficult, but rewarding part of the job.

isabelle started her over winter break, home from grad school and looking for a new kind of challenge. what began as loaves for coworkers turned into something bigger, chef asked for the starter, and bertha’s been part of the family ever since.
