2. Cabrito Tacos: slow-braised goat birria with melted queso, bright longhot-tomatillo salsa, and a finish of fresh onion and cilantro
3: Pork Shank Estofada: guajillo-braised pork shank served with creamy white beans and finished with a rich, nutty pipián verde
