This week we’re pouring something a little off the beaten path: the 2021 Doña Blanca “Deldoma” from Arribes, Spain. A white wine with bright citrus, fresh herbs, and a mineral edge that reflects the rugged landscape it comes from.

Alongside it, we’re serving Malvarosa, a rich and buttery sheep’s milk cheese from Valencia that helps preserve the rare Guirra sheep breed.
